Chipotle Salsa

Ingredients:
  • 2 (15oz.) cans diced tomatoes
  • 1 (10 or 15oz.) can diced tomatoes with green chiles (such as Rotel)
  • 1 medium sweet onion, diced
  • 1 to 3 chipotle peppers packed in adobo
  • 1 tsp. ground cumin
  • 1 tsp. salt
  • 1/2 tsp. ground pepper
  • 1 tsp. sugar
  • 1 bunch cilantro, stems roughly removed
  • 1/4 C lime juice
Instructions:

Into a blender or food processor, add the diced tomatoes, the diced tomatoes with chiles and the onion. Add the remaining ingredients. Blend until it's totally combined.


Note: Make the salsa several hours before serving, as it will give the flavors a chance to blend together.
